Banana Chocolate Chip Sheet Pan Pancakes

A simple breakfast that can be frozen off and used on busy mornings.

Ingredients
  

  • 2-4 Ripened Bananas
  • 2 Cups Kodiak Cake Mix or any pancake mix
  • 2 Cups Liquid - I typically use 2 eggs and then finish with raw milk.
  • 1/2 Cup Chocolate Chips who actually measures chocolate??? -- pour until heart is happy or the amount that won't cause kids to go crazy.

Extra Bulk Options to Keep the Kids Full

  • 1 quick pour/scoop chia seeds
  • 1 quick pour/scoop Flax Seed or Flax Seed Meal
  • 1/4-1/2 Cup quick cooking oats (rolled or steel cut)
  • 2 heaping spoonfuls Greek Yogurt
  • 1 generous pour Apple Sauce

Instructions
 

  • Take peeled bananas and mash them in the mixing bowl with a fork or whisk.
  • Measure out 2c. Kodiak Cake (or pancake) mix and dump into bananas.
  • Using the same measuring cup (less dishes) crack eggs and then fill with your liquid of choice until 2c. of liquid is reached. Pour into bowl with bananas and pancake mix.
  • Mix well. Batter should have some density to it, not overly thick but not runny.
  • Do Bulk Mix-ins here or after mashing bananas.
  • Chocolate chips are the last thing I add as I just fold them in.

Mix Ins for Extra Bulk

  • I would not suggest adding all of the drier ingredients without counter balancing with wet ingredients. Chia and Flax add nutrient density while yogurt (especially greek) and oatmeal adds to longevity of that full feeling.

Baking Off

  • Turn oven on to 350ºF
  • Line your sheet pan with parchment paper for ease of clean up or grease your pan.
  • Pour your batter into your sheet pan
  • Bake for 20ish min - keep an eye on them. You are looking for a golden color on the top and for them to not be gooey (unless its a chocolate chip)

Saving the Extras

  • If there are extras, "score!" you can put them in the fridge OR freezer. If freezing, flash freeze them.
  • To Flash Freeze: Take cooled, cut pancakes still on the pan with parchment ideally, and place them in the freezer. Once frozen pull them out. Pop pancakes off of pan and place in a freezer bag or container.
  • My boy will grab them and eat them frozen, popped in the microwave, toaster oven or you could reheat a bunch in the actual oven.
